For thirty years, Chef Tony Campos has stood by the tortilla press, turning simple, honest ingredients into the warm, pillowy handmade flour tortillas our Paterson community has come to love.
When our family first opened the doors, we made a promise to share traditional Puebla recipes without cutting corners. While many restaurants rely on pre-packaged bags, Chef Tony insisted on making our flour tortillas fresh in-house. We mix the dough from scratch every day using a generational recipe, portion each piece by hand, and press and bake them fresh in our commercial tortilla machine. They come out soft, lightly blistered, and ready to fold around your favorite dishes.
Over the past three decades, these tortillas have anchored countless meals. They pair with our rich Mole Poblano, scoop up slow-braised meats, and sit in warm baskets at the center of every weekend family celebration. Whether our dining room is buzzing with shared stories, chilled Micheladas, or handcrafted margaritas, the neighborhood energy on McLean Boulevard makes our dining room feel like home.
We have watched toddlers in high chairs grow up to bring their own children to our tables. Even as modern conveniences grow and neighbors order their weeknight dinners through Toast online ordering, the heart of our kitchen remains the same.
